Transform the notorious stinging nettle into a delicious, nutrient-packed side dish that rivals the best sautéed greens.
Ingredients

4 cups fresh nettle leaves (wear gloves when handling!)

2 tablespoons olive oil
-
2 cloves garlic, minced
-
1/4 teaspoon sea salt

Pinch of black pepper

Optional: Squeeze of lemon juice
Directions
Prepare Nettles:
Thoroughly wash nettles under cold running water
Use tongs or gloved hands to transfer to a colander
Boil a pot of water and blanch nettles for 2 minutes to remove stinging properties
Drain and immediately rinse with cold water to stop cooking
Gently squeeze out excess moisture
Sauté:
Heat olive oil in a large skillet over medium heat
Add minced garlic and sauté for 30 seconds until fragrant
Add blanched nettles to the pan
Sauté for 3-4 minutes, stirring occasionally
Season with salt and pepper
Serve:
Transfer to a serving dish
Optional: Squeeze fresh lemon juice over the top
Serve immediately as a side dish
