Hearty winter soup with lovage, an incredible herb supporting multiple body systems: revitalizes detox organs, supports the health of the urinary tract, and helps to activate the immune and lymphatic system.
Ingredients
- 1 medium onion, chopped
- 3 tablespoons butter
- 3 cups of vegetable or chicken stock
- 3 cups of potatoes, peeled and chopped
- 3 tablespoons fresh Lovage leaves, chopped
- Salt and Pepper to taste

Crème Fraîche (optional)
Directions
- In a saucepan heat the butter and add the onion.
Sauté until the onion is translucent.
Add the potato and sauté for 3-5 minutes.
- Add the broth and simmer until the potatoes are soft.
- Add the Lovage and stir.
- Remove from heat and puree with a hand blender.
- Add salt and pepper to taste.
Serve with a teaspoon of Crème Fraîche on top.
